Chilled Sesame Noodles

Chilled noodles are my daughter Ajna’s favorite summer snack. Every time I make them, she salivates over them and then takes the leftovers home. I’ve made them with different vegetables, including raw asparagus or zucchini, roasted butternut squash, and herbs like parsley, basil and cilantro. If you’re not using sesame, try peanut butter with chopped toasted peanuts. You can do the same with almond butter. I’ve made them with buckwheat noodles, fresh pasta and rice noodles. This recipe uses cabbage; however, you can substitute it with any vegetable of your choice. Given how salty soy sauce can be, hold off on adding salt until you taste the finished dish.
